Cheesecake Pops!

Around our house we call my husband Randy "Chef Jones" because he does all the cooking! One of our favorites is a recipe he adapted from the cookbook Sticky, Chewy, Messy, Gooey by Jill O'Connor. Our niece's baby shower was yesterday, and she requested these yummy little bites dusted with sparkling pink sanding sugar. They are so scrumptious and pretty too! You can use your favorite cheesecake recipe to make these. Just make it without the crust, scoop out the balls with an ice cream scoop, freeze them overnight, and then dip them in melted chocolate and your choice of sprinkles. Randy recommends beating the mixture for a couple of minutes longer than cited in the recipe, so you get an extra creamy consistency with no lumps.
